This workshop offers an in-depth introduction to the world of mushrooms, providing an opportunity to explore the curiosity and mystery of mycology through both theory and hands-on practice. Participants will gain the foundational knowledge needed to establish a small-scale mushroom production, whether to supplement household diets or as a first step toward a small business.


What you’ll learn / do

  • An overview of fungal ecology
  • Reproductive cycles and optimal living conditions of fungi, providing the theoretical framework for practical application
  • An introduction to common home-scale gourmet and medicinal mushroom cultivation methods and species, including oyster, shiitake, garden giant, enokitake, and lion’s mane
  • A materials and equipment checklist for small-scale production
  • A hands-on session inoculating logs with shiitake plugs, allowing participants to experience each step of the process firsthand

About the facilitator

Geoffroy Godeau is a Belgian-trained landscape architect with extensive international experience in permaculture and natural building. He discovered permaculture while traveling in Nicaragua, an experience that profoundly shaped his professional path.
He spent several years living and working intermittently at the Panya Project, a permaculture institute in Thailand, where he both learned and taught, with a primary focus on natural building techniques. In parallel, he has worked on and facilitated natural building projects in Belgium and has applied permaculture principles in landscape design and implementation.
Geoffroy is an active member of Brin de Paille, the French-speaking permaculture network in Europe, and has consulted and taught internationally through Surplus Permaculture.
In addition to his work in design and education, he has been cultivating mushrooms for many years across several countries. This long-standing practice has evolved into a teaching focus, which he now shares through Escola Regenerativa de Forniçô.
